    Bacon and Cheese Soda Bread

    Bacon and cheese soda bread is as intensely delicious as you'd hope - a baked Irish treat made all the more mouthwatering with crisp bacon and sharp, mature cheddar.

    This delicious, savoury recipe is perfect for a St. Patrick's Day breakfast. Plus it's quick to make and easy to follow, resulting in a stunning loaf of bread that will satisfy your deepest bacon cravings.

    Soda bread is a traditional Irish bread made with baking soda and buttermilk. It's quick, easy to make, and a great way to use any leftover bacon or cheese.

    Soda bread is delicious when served warm. Or it makes for a really luxurious sandwich!

    To make your bacon and cheese soda bread, you'll mix the flour, salt, bicarbonate of soda, onion powder, parsley, bacon and grated cheese together in a bowl.

    Next, you'll make a well in the centre of the mixture and add the yoghurt and lemon juice, mixing just until the flour is incorporated and the dough starts to clump.

    Then you'll form it into a ball with your hands, transfer to a baking sheet, and press a cross into the top with a wooden for that classic soda bread shape.

    Sprinkle more cheese on top and then all that's left to do is bake to salty, savoury, cheesy perfection.

    Ingredients

    • 500 g (1.1 lb) plain white flour (all purpose flour) plus more to flour your hands
    • 1 tsp bicarbonate of soda (baking soda)
    • 1 tsp onion powder
    • 1 tsp dried parsley
    • 1 tsp salt
    • 1/2 tsp (0.5 tsp) freshly ground black pepper
    • 150 g (5.3 oz) cooked bacon chopped into small pieces (approx 350g uncooked weight)
    • 150 g (5.3 oz) mature cheddar cheese (sharp cheddar) (grated)
    • 450 g (15.9 oz) thick set yogurt
    • 2 tbsp lemon juice

    Equipment

    • Weighing scales
    • Measuring spoons
    • Measuring jug
    • Large mixing bowl
    • Whisk
    • Citrus juicer
    • Wooden spoon
    • Grater
    • Kitchen knife
    • Nonstick baking sheet

    Instructions

    Preheat the oven to 200C (180C fan).

    Put the flour, salt, bicarbonate of soda, onion powder, parsley, salt and pepper in a mixing bowl.

    Whisk together so that everything is evenly distributed.

    Add the chopped bacon and 2/3 of the grated cheese.

    Whisk again.

    Make a well in the centre.

    Pour the yoghurt and lemon juice into the well.

    Mix well until all the flour is incorporated and it starts to clump.

    Flour your hands and gently form into a ball.

    Gently transfer your dough to a nonstick baking sheet.

    Press a cross into the top with a wooden spoon. This helps the dough rise and gives the loaf a classic soda bread shape.

    Scatter the remaining cheese on top.

    Bake in the oven for 40 minutes.

    Cool on a wire rack. Don't cut into slices until it's fully cooled.

    Enjoy on its own, buttered, or make a bacon sandwich with it!
