
French toast is one of those dishes with so many plus points, it's always a winner. Not only is it quick to prepare, it's absolutely delicious, and perhaps best of all, it works with a huge variety of accompaniments! From the delicious griddled apple slices with lemon mascarpone I have for you today, to berries and powdered sugar or served with warm peaches, French toast is the perfect vehicle for all sorts of deliciousness!
To cook the dish I'm sharing with you today, I used the Zyliss 26cm Non-Stick Square Grill Pan, which is part of a range of non-stick Zyliss pans that let you cook pretty much anything without the need for fat! The pan in a great size and I've really enjoyed putting the pan through its paces and it has performed brilliantly.
When you pick the pan up, you'll find that it's pleasingly sturdy. There's a 3-layer coating which helps it to conduct heat well, including with induction hobs, and you'd be forgiven for thinking one of the layers must be magic because everything just slides off the griddle with ease!
The quality of the pan is backed up by a 10-Year non-stick guarantee, which also applies to the rest of the Zyliss range of non-stick pans, which includes three frying pans (20cm, 24cm and 28cm) as well as a sauté pan with glass lid.
I'm certain I'll use this pan time and time again. Now let's get making some gorgeous spiced French toast with warm cinnamon apples, citrus mascarpone and honey.
Ingredients
For the lemon mascarpone
- 150g (5.3 oz) mascarpone
- 1 unwaxed lemon, zest and juice
- 1 tbsp honey
For the toast
- 2 medium free range eggs
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1 tbsp honey
- 4 slices wholemeal bread, medium thickness
For the apples
- 2 green apples, cored and cut into thin slices
- 2 tsp cinnamon
- 1 tbsp honey
- 25g (0.9 oz) walnuts, roughly chopped
Instructions
For the lemon mascarpone, put the mascarpone, lemon zest, and honey in a bowl. (You can add the juice too for an extra citrus hit, if you wish)

Stir gently to combine. Pop in the fridge.

For the French toast, preheat the oven to 160C/320F (140C/285F fan). In a bowl, combine the eggs, cinnamon, mixed spice and honey.


Dip each piece into the egg mixture, shake off the excess – you should have just enough batter for all four slices.


Warm the pan over a medium heat.

Griddle for 30 seconds.

Flip and fry for 30 more seconds until just cooked. Pop on a plate or baking tray and into the oven to keep warm.

For the griddled apple slices, pop the apple slices into a bowl, add the cinnamon and honey.

Toss until well coated.

Lay the slices onto the grill pan, fry for 60 seconds.

Flip and cook for a further 30 seconds.

To plate up, serve two triangles of French toast to each plate, top with apple slices and a generous dollop of the lemon mascarpone, scatter with walnuts and serve.

I'm not kidding, when I saw even the first picture my mouth was literally watering looking at it.. Then I watched the video and I love how it's all griddled/healthy fried.
