    No Yeast Cheese Bread

    This no yeast cheese bread takes minutes to prepare with absolutely no kneading or proving required! It's packed with cheese and absolutely delicious.

    It's perfect for lunchboxes, toasted as part of a savoury breakfast, or served as part of a generous ploughman's lunch.

    This no yeast cheese bread is actually a type of soda bread, meaning that, instead of using yeast to get the bread to rise, we use baking soda (bicarbonate of soda) which reacts with the acidic yogurt and lemon juice to produce bubbles of gas, giving us a beautifully aerated crumb.

    In this recipe, you'll take the core dry ingredients (flour, salt, bicarbonate of soda) and core wet ingredients (lemon juice and yogurt) and flavour your bread with onion powder, sage, and of course, plenty of grated mature (sharp) cheddar.

    The method is really simple. You'll combine the flour, bicarb, seasoning and spices, followed by grated cheese, then you'll make a well and stir in the yogurt and lemon juice so give a rough dough. Easy!

    Next, you'll skip any need for kneading or proving and simply form the dough into a rough ball on a floured tray.

    Cut an X in the top for that classic soda bread shape, scatter with more cheese and it's ready to bake!

    Ingredients

    • 500 g (1.1 lb) plain white flour (all purpose flour) plus more to flour your hands
    • 1 tsp bicarbonate of soda (baking soda) baking soda
    • ½ tsp (0.5 tsp) onion powder
    • 1 tsp dried sage
    • 1 tsp salt
    • ½ tsp (0.5 tsp) freshly ground black pepper
    • 250 g (8.8 oz) mature cheese grated
    • 450 g (15.9 oz) thick set yogurt
    • 2 tbsp lemon juice

    Equipment

    • Weighing scales
    • Measuring spoons
    • Measuring jug
    • Large mixing bowl
    • Whisk
    • Citrus juicer
    • Wooden spoon
    • Grater
    • Kitchen knife
    • Nonstick baking sheet

    Instructions

    Preheat the oven to 200C (180C fan).

    Put the flour, salt, bicarbonate of soda, onion powder, sage, salt and pepper in a mixing bowl.

    Whisk together so that everything is evenly distributed.

    Reserve a handful of the grated cheese (about 50g) and add the rest to the bowl.

    Whisk again.

    Make a well in the centre.

    Pour the yogurt and lemon juice into the well.

    Mix well until all the flour is incorporated and it starts to clump.

    Flour your hands and bring the dough together in the bowl so that it forms a rough ball.

    Gently transfer your dough to a floured nonstick baking sheet.

    Score a cross in the top with a sharp knife to help the dough rise.

    Scatter with the remaining cheese.

    Bake in the oven for 40 minutes.

    Cool on a wire rack. Slice with a serrated knife once cool.
