    Pink pig cupcakes recipe

    This pig cupcakes recipe is super easy and the results are so cute! They'd be great for a pig or farmyard themed party.

    The pink sponge is topped with a candy melt and white chocolate icing and decorated with candy melts, writing icing and a good dollop of creative license.

    The sponge batter is really easy as you'll pop the margarine, sugar, eggs and flour into a bowl all at once, whisk together, then brighten with a dash of pink colouring.

    Once the batter is shared into 12 cupcake cases, your cakes will take just 20 minutes to bake!

    For the icing, you'll simply melt some white chocolate together with some pink candy melts and spoon the icing on top of the cakes. You'll then use whole candy melts to form the snout and ears.

    Once everything has set, all that's left do is use writing pens to give eyes, mouths and heaps of personality to your pink pig cupcakes!

    Here's the full instructions, complete with lots of step-by-step photos to ensure you absolutely nail this pig cupcakes recipe.

    Ingredients

    For the sponges

    • 150 g (1 stick + 3 tbsp) baking margarine
    • 150 g (¾ cup + 1 tbsp) white caster sugar (superfine sugar)
    • 2 large free range eggs
    • 150 g (1 cup + 1 tbsp) self-raising white flour (self rising flour)
    • pink food colouring

    For the icing

    • 100 g (½ cup) pink candy melts
    • 100 g (3.5 oz) white chocolate

    For the details

    • 36 pink candy melts (about 25g/1 oz)
    • writing icing pens black, pink, red and green

    Equipment

    • 12-hole nonstick muffin tray
    • Cupcake cases
    • Weighing scales
    • Large mixing bowl
    • Whisk
    • Silicone spatula
    • Large mixing bowl
    • Wire cooling rack
    • Spoon

    Instructions

    Make the sponges

    Preheat the oven to 160C (140C fan, 320F).

    Line a 12-hole muffin tray lined with cupcake cases.

    Whisk until creamy.

    Add the pink food colouring.

    Stir in to achieve a uniform shade.

    Spoon the mixture into the cupcake cases.

    Bake for 20 minutes.

    Cool completely on a wire rack

    The tops of your cupcakes should be flat and sit below to the tops of the cases, leaving just enough room for the icing.

    If they’ve risen too much or domed, you may need to trim them a little with a small serrated knife once completely cooled.

    Make the icing

    Put the candy melts and white chocolate in a heatproof bowl.

    Heat in the microwave for 30 seconds, stir and repeat until fully melted.

    Spoon on top of the cakes immediately. Tap them gently to encourage the icing to spread to the edges and level off.

    Add the final details.

    Once the chocolate icing has fully set, you can add the final decorations.

    Add two pink or white dots or writing icing to the snout.

    Then add black dots for the eyes and a little black line for the smile.

        Ooh yes, you could use the white choc icing minus the food colouring for the toping and for the ears you could use halved white chocolate fingers - you know the Cadbury ones? Then still the pink button for the nose then draw on the other details. Would love to see them if you do. We were thinking of trying other animals too e.g. a sheep!
