If you want roasties in a hurry, these air fryer roast potatoes with garlic and rosemary are the answer. They’re crisp on the outside, fluffy on the inside and there’s no parboiling required.

They’re perfect to serve with a roast, or as a midweek step up from the usual chips, boiled potatoes or mash.
And this recipe is perfect if your main oven is full of other delicious things and you need to break out the air fryer to cover the overflow.
To make my air fryer roast potatoes, you’ll peel the potatoes and cut them into bite size pieces.
Next, you'll pile them into the air fryer with salt, pepper, oil, two halves of a bulb of garlic (yes, one whole bulb, not just a clove or two!) and a few sprigs of rosemary.
The trick after that is to shake the potatoes at intervals as they roast so that they cook beautifully evenly, despite using way less oil than you’d use in an oven recipe.
The results are so good!
Packed with flavour, crisp at the edges with great colour, and the insides are as fluffy as the fluffiest baked potato you ever saw, making this my very favourite way to make roast potatoes.

Ingredients
- 600 g (1.3 lb) floury potatoes
- 2 tbsp vegetable oil
- pinch flaky salt
- pinch black pepper
- 4 sprigs rosemary
- 1 bulb garlic
Instructions
Cut the potatoes into 1 inch (2.5cm) chunks – this might be a bit smaller than you usually do them in the oven, but they need to cook through in a shorter time, so it’s important. It’s also important to get them all about the same size so that they cook evenly.
Put the potatoes in your air fryer without the grill tray or on on the grill tray in a tin that fits in your air fryer and give them a good mix.
Cut the garlic bulb in half and nestle in amongst the potatoes, along with the rosemary sprigs
Add the oil, salt and pepper. Give it a good shake to coat evenly.
Set the air fryer to 200C/400F and cook for 20 minutes, shaking well every 5 minutes.
Cut a potato piece open to ensure it’s cooked and fluffy all the way through before serving.
They really are perfect roast potatoes.
