    Oat bran muffins

    Healthier than your average muffin and just as tasty, these wonderful oat bran muffins are lightly sweetened with banana and honey.

    Some bran muffins can be dense and dry, but not these! The mashed bananas. yogurt and touch of oil helps keep the crumb light, moist and delicious.

    Since these oat bran muffins are low in sugar and high in fibre, they're a great breakfast choice. Enjoy them at the table with fruit and yogurt, or grab one to eat on the go.

    The really great news is that these yummy muffins are super simple to make. You just combine the wet ingredients, stir in the dry, add the mashed banana and then spoon the batter into a lined muffin tray. 20 minutes later, you'll have perfectly baked, delicious oat bran muffins.

    Here's how to make these gorgeous breakfast treats.

    Ingredients

    • 100 ml (3.4 floz) vegetable oil (canola oil)
    • 50 g (1.8 oz) honey
    • 300 g (10.6 oz) natural yogurt
    • 1 large free range eggs
    • 300 g (10.6 oz) oat bran
    • 100 g (3.5 oz) plain white flour (all purpose flour)
    • 1 tbsp baking powder
    • 1/4 tsp salt
    • 2 bananas (190g / 6.75 oz peeled weight) mashed
    • 1 tsp vanilla extract

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large mixing bowl
    • Whisk
    • Ice cream scoop
    • 12-hole nonstick muffin tray
    • Cupcake cases
    • Wire cooling rack

    Instructions

    Preheat the oven to 200C/390F (180C/355F fan). Line a 12-hole muffin tray with paper cases.

    Put the oil, honey, plain yogurt and eggs into a large mixing bowl.

    Whisk until well combined.

    Add the oat bran, plain flour, baking powder and salt.

    Fold together.

    Add the mashed banana.

    Stir through.

    Spoon the mixture in the muffin tray - I find it easiest to do this using a large ice cream scoop. Level off the tops.

    Bake for 20 minutes until risen and golden.

    Allow to cool in the tin for 5 minutes, then transfer to a wire cooling rack to cool completely.

      Oh Emily. I just love your recipes so much! Every time you post something new, I share it with the kids and they're completely won over as soon as they see your photos. You've even encouraged my fussiest eater to try ingredients that she would normally turn her nose up to ... Think I need to send her to yours for dinner!! I showed her this earlier and she has told me she wants some made for her school lunchbox ... and I need to make enough for her to give one to each of her best friends. They look delicious. I need all of your secrets!!
