    Cheese and Onion Soda Bread

    Cheese and Onion Soda Bread is a delicious Irish treat, packed with flavour and no proving or kneading required.

    It's a soft, aerated, savoury bread that can be made from start to finish in under and hour and it's perfect for breakfast, lunch or dinner!

    If you're not already familiar with soda bread, the key difference from most breads is that it's made with baking soda and buttermilk as the raising agents instead of yeast. This makes it a very quick and easy bread to make, and it doesn’t require special equipment or ingredients.

    This cheese and onion soda bread takes my tried and tested basic soda bread recipe and adds cheese, crispy fried onions and few herbs and spices to create a beautiful soda bread that's as delicious and it is hearty!

    The cheese and onion add a lot of flavour and richness to the bread, making it perfect for any meal.

    To make your soda bread, you'll first combine flour, salt, bicarbonate of soda, garlic granules, oregano, salt and pepper, then stir in yogurt and lemon juice.

    The acid in the citrus juice will start reacting with the alkaline baking soda straight away, so all you'll need to do is get the dough into a ball, pop it on a tray and bake. There's no need for kneading or proving.

    Your kitchen will smell incredible as your cheese and onion soda bread bakes, so probably the toughest part of this recipe is finding the restraint to allow the bread to cool slightly before slicing.

    Ingredients

    • 500 g (1.1 lb) plain white flour (all purpose flour) plus more to flour your hands
    • 1 tsp bicarbonate of soda (baking soda)
    • 1/2 tsp (0.5 tsp) garlic granules
    • 1 tsp dried oregano
    • 1 tsp salt
    • 1/2 tsp (0.5 tsp) freshly ground black pepper
    • 100 g (3.5 oz) crispy onions
    • 150 g (5.3 oz) grated mature cheddar
    • 450 g (15.9 oz) thick set yogurt
    • 2 tbsp lemon juice

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large mixing bowl
    • Whisk
    • Citrus juicer
    • Wooden spoon
    • Kitchen knife
    • Nonstick baking sheet

    Instructions

    Preheat the oven to 200C (180C fan).

    Put the flour, salt, bicarbonate of soda, garlic granules, oregano, salt and pepper in a mixing bowl.

    Whisk together so that everything is evenly distributed.

    Add the crispy onions and the grated cheese.

    Whisk again.

    Make a well in the centre.

    Pour the yoghurt and lemon juice into the well.

    Mix well until all the flour is incorporated and it starts to clump.

    Flour your hands and gently gather the dough into a bowl - it doesn't need to be smooth.

    Transfer your dough to a nonstick baking sheet.

    Press a cross into the top with a wooden spoon. This helps the dough rise and gives the loaf a classic soda bread shape.

    Bake in the oven for 40 minutes.

    Cool on a wire rack completely before slicing and serving.
