    Wholemeal waffles

    These wholemeal waffles are light, fluffy and so delicious, you'd never guess they're made with wholemeal flour!

    They are perfect with breakfast and a great way to get a little extra fibre into your diet - in fact, they have three times the fibre of standard waffles.

    Making these lovely wholemeal waffles is easy and you'll love the hint of nuttiness the extra bran brings.

    To start, you'll combine the wet ingredients, whisking melted butter together with eggs, milk and vanilla.

    In a second bowl, you'll mix the dry ingredients: wholemeal flour, white flour and sugar. Finally, you'll bring it all together, whisking to a smooth, glossy batter.

    After that, it's simply a case of pouring the batter into your hot waffle iron and cooking to golden perfection. YUM.

    Here's the full recipe for my wholemeal waffles, complete with lots of pictures to help you along the way.

    Ingredients

    • 3 medium free range eggs
    • 420 ml (1¾ cups) whole milk
    • 125 g (9 tbsp) salted butter melted
    • 1 tsp vanilla extract
    • 100 g (⅔ cup) self-raising white flour (self rising flour)
    • 200 g (1⅓ cups + 1 tbsp) wholemeal self-raising flour (self rising flour)
    • 55 g (¼ cup + 1 tbsp) white caster sugar (superfine sugar)

    Equipment

    • Weighing scales
    • Measuring spoons
    • Measuring jug
    • Large mixing bowl
    • Whisk
    • Ladle
    • Waffle iron

    Instructions

    Preheat your waffle iron.

    Put the eggs, milk, melted butter and vanilla in a large bowl or jug.

    Whisk together.

    In a second bowl, measure the flour and sugar.

    Mix together and make a well.

    Pour the milk mixture into it the well.

    Using your whisk, gradually incorporate flour into the milky mixture until you have a smooth batter.

    Spoon a small ladleful of batter into the waffle maker. The batter will give 8 waffles in a standard waffle maker. Don't overfill your waffle iron as the batter will expand considerably as it cooks.

    Cook for 3-5 minutes, depending on how well done you like your waffles.
