    Air Fryer Flapjacks

    Air fryer flapjacks are every bit as gooey, chewy, sweet and oaty as ones made in the oven, and they're even quicker to bake.

    If you're from the US, you may be expecting pancakes, but not so. In the UK, flapjacks are what you might call oat bars, cereal bars or an oat slice, and they almost always include golden syrup for a distinctively chewy texture.

    To make your air fryer flapjacks, you'll melt butter, syrup, sugar and vanilla together, then stir in rolled oats, followed by a small free range egg.

    I confess, the egg is very much not traditional, but I find it has no bearing on the flavour while helping ensure the flapjacks hold together perfectly, so I always add one!

    With your flapjack mixture prepared, you'll press it into a shallow tin and bake in the air fryer for 20 minutes before allowing to cool, turning out and cutting into beautiful, gleaming, golden brown squares.

    These flapjacks are perfect little bites to enjoy as a snack, as a small dessert, or to take with your in your bag for when you need a burst of energy.

    Ingredients

    • 100 g (3.5 oz) salted butter
    • 75 g (2.6 oz) golden syrup
    • 50 g (1.8 oz) dark brown sugar
    • 1 tsp vanilla extract
    • 225 g (7.9 oz) rolled oats
    • 1 small free range egg

    Equipment

    • Weighing scales
    • Measuring spoons
    • Large heatproof bowl
    • Wooden spoon
    • Kitchen knife
    • Chopping board
    • Baking tin to fit your air fryer (20cm x 18cm x 8cm / 8ins x 7ins x 3ins)
    • Air fryer

    Instructions

    Grease a square baking tin (20cm x 18cm x 8cm - or whatever fits in your air fryer basket).

    Put the butter, golden syrup, sugar and vanilla in a microwave-safe bowl.

    Heat in 30-second bursts, stirring between bursts, until the butter is dissolved and you have a dark liquid.

    Add the oats.

    Stir until they're well coated.

    Add the egg.

    Stir through, aiming to distribute it right through the mixture.

    Transfer the mixture to the greased tin and press down firmly all over.

    Set the air fryer to 160C/320G and bake for 20 minutes, or until golden brown on top, then leave to cool completely.

    If it seems at all crumbly, place in the fridge to firm up.

    Transfer to a chopping board and cut into 16 pieces (in a 4 x 4 pattern) with a sharp knife.
