Baobab smoothie

The Eden Project sent me this recipe for a tropical smoothie using the Baobab powder and I must say it's deliciously fruity and creamy.

  • 500 ml coconut milk
  • 1 litre pineapple juice
  • 10 g baobab powder
  • 70 ml water
  • 40 g caster sugar
  • ice to serve
  • 5 g mint chopped


  • Put the coconut and pineapple juice in a blender.
  • Put the sugar and water in a small pan and bring to the boil. Allow to cool.
  • Add the baobab powder and mix to a smooth liquid.
  • Add to the blender and blitz until smooth.
  • Serve in tall glasses, sprinkled with the chopped mint.


Store any leftover smoothie in the fridge in a sealed container and drink within 24 hours.
